RIVERSIDE WINE BAR HITHE + SEEK ANNOUNCES NEW HEAD CHEF ALONG WITH CAREFULLY CURATED SPRING MENU

Thames-side wine bar Hithe + Seek is pleased to announce its new Head Chef, Fabio De Paolis. Fabio is an acclaimed chef with experience in some of the world’s finest kitchens such as the Giorgio Armani Restaurant on Fifth Avenue, New York City and the Mandarin Oriental in Bodrum, Turkey. Now setting his sights on Hithe + Seek, Fabio will bring new twists to the menu which prides itself on offering a mix of old world and new global flavours. He will also oversee dining throughout the wider Westin London City hotel.

The new menu released this month includes a range of exquisite plates from meaty dishes such as a braised mangalitza pork belly bao bun and an adobo chicken ballotine with capsicum purée, to fish based favourites including tuna tartare tacos with avocado purée, chives and finger lime and a twist on Hithe + Seek’s signature grilled Galatian octopus, now with bitter leaf salad, blood orange purée.

The vegetarian offering has been carefully considered with choices such as broad bean ravioli, quail’s ‘ and oyster mushroom and potato shawarma. Guests can enjoy Hithe + Seek’s classic Parker House rolls with chilli, tomato, fennel butter and olive oil, plus indulgent meat and cheese boards.

Not to be forgotten, the new menu is serving up sweet treats including plant-based tipsy cake, with honey whiskey sauce and a gluten free chocolate fondant with matcha ice cream.

While the bites are a foodie’s dream, Hithe + Seek is all about the wine. Every small plate has a recommended accompanying wine, from full bodied reds to fruity whites and everything in between. Alongside the extensive wine list, the new spring menu offers a range of beautiful and innovative cocktails.

Guests can look forward to signature cocktails such as The 1666, a smoking (literally) combination of Laphroaig, Amaretto, IPA, rosemary reduction and fresh lemon, as well as The Mudlark, a tropical blend of Del Maguey Vida Mezcal, Malibu, Blue Curaçao, pineapple juice and apricot liquor. There is also a fantastic range of non-alcoholic cocktails including the refreshing London Garden Fizz which blends Seedlip Garden with grapefruit juice and mint, elderflower cordial and London Essence grapefruit.

Hithe + Seek has recently relaunched its monthly wine club, Seekers, which invites food and wine lovers to spend an intimate evening with expert sommeliers whilst enjoying the very best of the restaurant’s new menu. Set in the exquisite riverside location with views of the Tate, Shakespeare’s Globe and city beyond, Seekers evenings are truly interactive experiences, going beyond the typical sit-down-and-listen approach. Guests are able to engage with the expert hosts throughout, ask questions, and share thoughts on the wines and dishes being tried with the group.

Each month, Seekers partners with one of the UK’s highest quality wine merchants, from national favourites to independent up and comers. The next Seekers session on 27th April will be in partnership with Les Caves de Pyrene, allowing guests to discover the world of natural wines as experts showcase wines from small and independent winemakers with minimal chemical intervention and where the winemaking shows maximum respect for the environment.
