Penne Alla Vodka – Inspired by Gigi Hadid

What you may not know is that this recipe actually originated as Italian food favourite ‘Penne Alla Vodka’, and TikTokers have since shared their own flavoursome takes on the recipe. The simple yet elegant dish is just perfect for a nutritious weeknight meal, or if you have a date to impress.

Recipe: Serves two

Ingredients:

4 tbsp olive oil

1 tbsp butter

¼ onion

4 tbsp tomato paste

8 tbsp heavy cream

1 tbsp vodka

Red pepper flakes

Dash of diced garlic

4 tbsp parmesan cheese

Chopped basil

225g penne pasta

Method:

Heat olive oil, diced garlic and onion in a large saucepan until soft. Add your tomato paste and cook until caramelised.

Add your vodka and heavy cream and cook through.

Add red pepper flakes, feel free to add more than a tablespoon for an extra spicy dish. Season with salt and pepper.

Stir until all the ingredients are combined, then cook the pasta separately.

Add your butter and stir over medium heat until the sauce is smooth.

Save a quarter of the pasta water before draining and add this with the pasta to the sauce. Add parmesan cheese and basil to serve and feel free to add an extra dash of salt and pepper.

Recipe: Serves four

Ingredients:

5 tbsp olive oil

1 tbsp butter

4 chicken fillets

12 mini brioche buns

2 eggs

2 tbsp parmesan cheese, grated

¾ cup mozzarella cheese, sliced

1 cup breadcrumbs

Dash of diced garlic

½ onion

Dash of chopped basil

2 tbsp vodka

Tomato paste

1 cup heavy cream

Method:

Dip your chicken fillets in egg and breadcrumbs and shake off the excess.

Place chicken on a baking sheet with olive oil and let it heat for 3-4 minutes on both sides until golden brown.

Heat your saucepan with olive oil and add your tomato paste, heavy cream, vodka and chopped onion and let it simmer for 2-3 minutes.

Add butter, garlic and 2 tbsp basil and parmesan cheese to a bowl and brush this mixture on top of your brioche buns.

Add your chicken cutlets, spread the vodka sauce and add mozzarella cheese and a generous handful of parmesan to your buns.

Place brioche buns on a baking tray on a low setting to lightly toast.

Bake for 8-10 minutes until the cheese is melted.

3. Vodka Tomato Bruschetta

This classic Italian appetiser doesn’t have to be bespoken for the nights you go out to eat. As summer approaches, Bruschetta is taking the reins on TikTok with over 280 million views on the hashtag. Simple and easy to make, this Bruschetta recipe with added drops of vodka is a perfect way to capture all the flavours of summer on toast.

Recipe: Serves one

Ingredients:

1 baguette

Diced tomatoes

Crushed garlic cloves

Chopped green onions

Dash of chopped basil

2 tbsp vodka

2 tbsp olive oil

Salt and pepper to taste

Method:

Mix crushed garlic, onions, basil, vodka and olive oil in a bowl. Cover the bowl and let this sit for half an hour, allowing the flavours to soak and blend together.

Thinly slice your baguette slices and lightly toast until golden brown on both sides.

Once toasted, add your mixture and chopped tomatoes to your toast.

Add a further pinch of basil and salt and pepper for garnish and added taste.
